Raw Peppermint Slice using doTERRA oils

 

FOR THE BASE

  • 1 and 1/2 cups coconut flakes
  • 8 medjool dates (if you dont have medjool you can soak dried dates in warm water for 10 mins and then squeeze before adding to processor)
  • 1 tablespoon of cacao
  • 1 tsp vanilla (powder is best but you can use organic paste)

 

FOR THE PEPPERMINT LAYER (best bit)

  • 1 and 1/2 cups raw cashews
  • 1/2 cup coconut flakes
  • Pinch of rock salt
  • 2 tbsp rice malt syrup or honey
  • doTERRA peppermint essential oil. I use 6-8 drops however for your first batch I would recommend starting a little lighter as it is intense so just make sure you LOVE it first. Also pour straight into mix as it can sting skin if goes straight onto body.

 

TOP CHOC LAYER

  • 3 tbs cacao
  • 5 tbs coconut oil
  • 2 tbsp rice malt syrup or honey

 

METHODDDD

  • Line a baking tray or long container with baking paper for easy removal
  • Blend base layer until smooth consistency (i like a few chunks weird I know) and press firmly into container put in fridge whilst blending peppermint layer
  • Process the peppermint layer until smooth then lay on top of base layer pop back into fridge
  • Melt coco oil for choc layer if it isnt already runny. This layer should come out of processor combined and looking like melted choc
  • pour over base and peppermint layer and keep in fridge to set over night!
  • enjoy! and get a lock for your fridge its adictive
  • always remember raw treats are best kept cold as the coco oil will start to slide away!
