Lemon essential oil balls with maca and buckinis

1 cup almond meal

2 tbsp rice malt syrup

Handful raw almonds (if you like crunch and texture… if you don’t you are reading wrong recipe)

1 cup coconut flakes or desiccated coconut

2 tbsp coconut oil (those of you in Australia or anywhere where it is now hot and summer time aka coco oil becoming liquid, this recipe works best if the coco oil is slightly solidified so place some in fridge for dessert making)

6-8 drops doTERRA lemon essential oil

1 tsp maca powder (optional)

zest of 1 lemon

Process all ingredients in food processor until roughly combined

add 1 tbsp buckwheat (uncooked) or buckinis (which is activated buckwheat)

DO NOT blend the buckwheat in

Roll into balls and leave in fridge or freezer if saving for a later date…

Seriously delicious and so quick and easy to make! Add less almond meal and more coco flakes and raw almonds if you prefer not as dense. This recipe can also be used as a yummy base for slices!
