I have ALWAYS loved sweet things, dessert, slices, icing, ice cream, cakes the LOT. I have also LOVED creating new recipes that are a little healthier and still taste just as good. Please remember raw desserts etc are still high in natural sugars and shouldn’t be eaten on the reg however they make a great alternative as dessert or to take to a gathering etc.
The stuff you really want to know
What is in it and what you will need to make this delightful slice:
- Organic Coconut Oil
- Almonds to make into almond meal
- Organic raw cacao powder
- Organic coconut milk or coconut cream
- Medjool dates (often in recipes I say you can heat up dried dates but for this one it needs to be fresh medjool as this is what gives the gooeyness!)
- Himalayan salt
How your going to turn those ingredients into heaven:
The base: Place 1/2 cup almonds into processor and whiz (I like a few crunchy bits hence why my photo may turn out different to yours. I was always a crunchy peanut butter lover so if you are a smooth kinda gal or guy keep on blending) whiz until meal like consistency then add in 1/2 cup walnuts. Add 2-3 tbsp coco oil (make sure its melted and runny) 2 tbsp of cacao powder and 1 tbsp maple syrup or rice malt syrup. The mix should be pretty sticky. Press this mix into a container that is lined with baking paper. Press firmly and set in freezer until next layer is ready.
The centre filling: no need to wash the food processor just throw in, 2 cups of dates, 1/2 cup coconut milk or cream (cream will make it thicker and creamier) 1/2 cup coco oil, 1 tbsp tahini (unless you LOVE it then add to taste) and a pinch or two of himalayan salt. Pour this mix (should again be sticky and gooey) over the base layer and pop back in the freezer.
In a bowl (or blender I just prefer to stir this bit) add 3 tbsp cacao, 1tbsp maple syrup or rice malt 1/2cup melted coco oil pinch or two of salt. Mix up and pour all over the top!
OPTION (advised) to make the top layer even dreamier melt a block of dark choc then add other ingredients before pouring over.
Set in fridge/freezer (depending when you want to eat)
over night in fridge 1 hr in freezer. Slice up and enjoy!
